I was delighted to discover this mango dessert. The recipe is in the cookbook of Frank Lotz as “Mango Coconut Cream Surprise”. Mango and coconut milk calm the Pitta, the main energizer in the hot months. Because sometimes, especially in the summer, my dear Paul can hardly catch a break. It’s summer now Pita time! Anyway, he had a lot of vata in him, and when pitta rose in the summer, his mind would shift into sixth gear and the excitement within him became uncontrollable. There was only one solution: mango dessert!

Mango desserts are more than just a delicious dessert. In Ayurveda, the dish also has health-boosting properties. What could be better than doing something good for your health with a delicious dessert?

Is it milk or coconut milk for mango dessert?

By the way, the original recipe of Ayurvedic chef Frank Lotz uses 200 ml of cream. Since I follow an Ayurvedic vegetarian diet, I replaced the cow’s milk with coconut milk. Organic coconut milk is available everywhere nowadays. I always recommend the organic version. By doing this, you are not only doing good for yourself, but also for the land and soil where food is grown. Not everyone likes the strong taste of coconut milk. Then you can mix 250 grams of coconut milk with half and half of cow’s milk.

The perfect ingredient for Ayurvedic mango desserts

Ayurveda places great emphasis on choosing good, ripe and healthy food. It would be ideal if all products were regional. But what should you do with mangoes? Give it away? No, I don’t either. But in this case (and in all others) I would focus on the best organic quality. Of course, oranges and lemons don’t grow in northern Germany, but here too, organic quality makes up for a lot, at least in conscience.

In Frank Lotz’s original recipe, a teaspoon of rose water was also added. If you like to cook with it, you’ll want to keep it on hand. But it’s not worth buying a whole bottle just for a teaspoon of rose water. I’ll provide you with the link below if you want to try rose water. All I can tell you is that it tastes and smells just as irresistible as roses and summer!

The Surprise Ingredient in Mango Coconut Cream

Mango Dessert Recipe

Ingredients for 6 servings:

  • 4 tablespoons brown cane sugar
  • 4 cups water
  • 1/2 teaspoon ginger, freshly grated (or powdered)
  • 2-3 ripe mangoes (depending on size)
  • Juice of 2 oranges
  • 1 squeezed lemon
  • 2 pinches grated Cardamom
  • 3 saffron thread tips
  • 1 package vanilla pudding mix
  • 250 g coconut milk
  • 1 teaspoon rose water (optional)
  • Strawberries, raspberries or other fruit for garnish

If you like a little treat with your dessert, then don’t go for pureed mango desserts.

Preparation: Mango Dessert

Approx. 45 minutes

  • Boil 4 cups of water, sugar and ginger over medium heat until reduced by half.
  • Meanwhile, peel and dice the mangoes. If you don’t end up pureeing them, you should chop them pretty small. Otherwise, feel free to use a knife.
  • Add the mango cubes, orange and lemon juice, cardamom and saffron and cook for 5 to 10 minutes until softened.
  • Mix the vanilla pudding powder with the coconut milk and stir slowly with a mixer. Carefully mix everything and boil until slightly thickened. Now add the rose water.
  • If necessary, puree the wonderful mango dessert surprise. I prefer it pureed, but others like to have something to put between their teeth.
  • Pour into a nice bowl and let cool.
  • Garnish with fresh fruit and some whipped cream.
