A study by the American scientific journal PNAS, published this Monday, April 24, 2023, establishes a link between the consumption of fried foods and a deterioration in mental health, which can in particular trigger symptoms of depression and anxiety.

Carried out on 140,728 people over a period of eleven years, this study, through its report, reveals that “the frequent consumption of fried foods, in particular the consumption of fried potatoes, is strongly associated with a risk of ‘anxiety and depression 12% and 7% higher, respectively.’

Among the people studied, men and young people would be the most exposed to this “association”.

L’acide acrylamide en cause

Acrylamide is a chemical that forms when you fry certain starchy foods, such as potatoes. According to the study, “long-term exposure to acrylamide induces anxious and depressive behaviors via oxidative stress-mediated neuroinflammation.”

The authors of this scientific paper explain the process by which a nuclear receptor superfamily protein (PPAR) naturally binds “acrylamide-induced lipid metabolism disorder in the brain.” They go on to state the importance of reducing the consumption of these fried foods.

An already disputed study

As soon as it was published, as soon as it was challenged, this study has already been the subject of criticism, notably from Dr. David Katz, specialist in preventive medicine and nutrition, and founder of the association True Health Initiative, a global coalition of experts dedicated to lifestyle medicine.

The doctor begins by validating the conclusions of the study, via an e-mail sent to CNN“The human component of this study may indicate exactly what it claims: higher consumption of fried foods increases the risk of anxiety and/or depression”

Subsequently, the doctor recommends taking this study upside down. “The causal pathway could just as well go the other way: people with anxiety and/or depression very frequently turn to ‘comfort foods for some semblance of relief,'” the doctor told the American channel. .

The “overall quality of the diet” has a significant impact on mental and/or physical health, this is the conclusion to be drawn from this study, according to the specialist.
