Compared with the Chaozhou thin shell, it is the sea melon seeds in Jiangnan. Each one is as big as a fingernail. After frying, the shell is transparent, and the clam meat inside can be seen. The meat is the same as thin-shelled meat, very little but very fresh. There is probably only one way for Jiangnan people to eat sea melon seeds, which is to fry them with scallion oil and stir-fry them into a plate.
