Li Chunen – Thin Shell | Live a Good Life | Headline Daily

On Saturday, following dinner, I went out for a walk with my mother-in-law to digest food.

Starting from Tin Hau, passing through Victoria Park, crossing the flyover to the Causeway Bay Typhoon Shelter, walking along the seaside, throwing off your arms and striding away, the weather was sultry, and following a while, I was sweating profusely. After walking like this for an hour, when I arrived in Sheung Wan, I remembered that I had a thin crust at “Shangxing Chaozhou Restaurant” the night before, which was very delicious. So I called Boss Sun and asked him if he still had a thin shell? He said yes. He asked him to keep one, and the two in-laws arrived at “Shangxing” sweating profusely, ordered a bottle of frozen beer, and ate a nine-story tower and a thin shell fried with bean paste.

The thin shell is very plump, and each piece is full of meat, fried to a salty fragrance, and extremely delicious. It was nearly ten o’clock at that time, there were not many customers in the store, and the guys were free, so they all came to chat, saying that this thin shell was also at the end of the season, and that it would be next year following eating a few more days. Thin shells are available every year following the Dragon Boat Festival and can be eaten on August 15th. It was not full at first, but gradually it got better, and then it persisted until the end of the season.

I once went to Shantou to film a food show. The local food is good, but I am not used to it. When the guys in many restaurants clean up the table, they will wipe the paper towels and cigarette butts on the table, and even the soles of their feet when eating. The mess is like stepping on a mass grave. Later, when eating thin shells, a local friend said a Chaozhou dialect to describe the deliciousness of thin shells, the effect of which is “a sandal without a woman”. That is to say, the woman took off her sandals and put her feet up and ate the thin shell according to the table, and while eating, spit the shell under the table, because it was too delicious, she ate too much, vomited more, and finally the thin shell piled up on the ground and slapped her The sandals were buried.

When I heard this legend, we were having dinner at a street restaurant. After listening to my friend, I looked at the mess at my feet and realized it.

Compared with the Chaozhou thin shell, it is the sea melon seeds in Jiangnan. Each one is as big as a fingernail. After frying, the shell is transparent, and the clam meat inside can be seen. The meat is the same as thin-shelled meat, very little but very fresh. There is probably only one way for Jiangnan people to eat sea melon seeds, which is to fry them with scallion oil and stir-fry them into a plate. The tender powder is transparent and extremely delicious.
