Let’s take advantage of the transition to summer, a few days ago, to play on the words in this sequence word of mouth with the suggestion to taste the teas. Then, you have to infuse with a downward gradient: you don’t infuse a oolong as one infuses a matcha. So there is a personal involvement, even a little ceremonial which is very soothing.”
