It is installed in an old farmhouse, in Cheval-Blanc. “Les Ouailles” is the name given to their beer. It is already a success, less than a year following its launch. Not easy, in today’s particularly competitive world.

This project is also the story of a professional retraining. Sébastien, an electrical engineer, worked in the nuclear industry. Gaëtan is a cook, another passion job. Their professional future seemed to be mapped out. But both dreamed of other horizons and personal projects. Their friendship brought them together professionally.

For ten years they brewed for friends in their garage

It all started when they were offered an amateur kit to brew beer. They got caught up in the game. For ten years, they brewed for friends in their garage. They tried, tested, tasted and shared a lot. A know-how acquired through research, trial and error…

Today, they produce five different beers, they are the fruit of these 10 long years of experience. Their beers are full of nuances and subtleties. Particular care is taken in choosing the ingredients involved in the composition of their beverages. They are of course from organic farming.

Thus, in the amber version, there is marzipan and lemon jam. Products that cannot be found in industrial beers.

It was in June 2022 that Sébastien and Gaëtan decided to take the plunge. They create their own company and abandon the garage to settle in a farmhouse that Sébastien inherited from his great-grandparents. This old farm has agricultural land that our brewers will soon use to grow the cereals and hops needed to make their beers.

The objective is to be quickly self-sufficient in the supply of these ingredients. Their technical installation was entirely designed by Sébastien, the engineer. From the outset, they made the choice of seriously dimensioned equipment. To both avoid having to do loads every day and to meet future and expected changes in demand. The investment will have been 400,000 euros, we are far from the garage of the beginnings.

For the name, they did not search long. Both lovers of the Luberon massif and the sheep that graze there, the name “Les Ouailles” came naturally.

Twelve months following the first armful, the two companions are satisfied with the progress made. Their beers are referenced in several wine merchants, delicatessens and in a few bars. But there is still work to be done and the objective for these two enthusiasts is to be able to make a living from it next year. By then, their beers will undoubtedly have convinced new flocks.
