In this way, the chef did not hesitate to say that at the age of 26 he opened his first venture in the field of gastronomy. “At that age I opened my first store in Lima. It was called Manifesto, I had it for almost five years. They nominated me for best restaurant, but I was a lousy businessman,” Bocchio said at the beginning.
So, he revealed the mistakes he made in his restaurant, which led to its closure following a while. Given this, the Tacneño chef pointed out that he did not take into account the rent he paid for the establishment and the number of tables for that small place, which caused him not to generate a return on investment, that is, sufficient profits. “It wasn’t a company as such,” he maintained.
“That space helped me as a springboard to make myself known because I didn’t have any staff in Lima, I didn’t know anyone. I just opened the restaurant one day. I didn’t even poll. I said: ‘I’ve already worked in Michelin Stars, I feel prepared to run a kitchen.’ Look what the youth do. I was wrong,” Bocchio mentioned to Rivero.
