The mid-2000s were marked by the public and political reappropriation of a societal issue that had long been sidelined: food (Brand, 2015; Marshall et al.2015 ; Raja et al.2017 ; Springmann et al., 2018 ; sleep et al.2019 ; Tendall et al., 2015). The health crises that have followed one another since the 2000s, as evidenced in the near past by the so-called mad cow crisis or even today that of Covid-19, bring the issues of dependency of food systems to international supply chains and the desire of food stakeholders and citizens, in the name of supply security, to regain control over their food production and consumption methods (Chiffoleau et al., 2020). The issue of urban food sovereignty has since experienced a noticeable resurgence (Garcia-Sempere et al., 2018 ; Gomez-Benito et al.2014 ; McMichael, 2014).
