The address is almost part of Liège’s heritage. “In July 1994, Etienne and Mari-Luce, my parents, created La Cantina. Our restaurant then offered Italian family cuisine significantly different from what was offered at the time. Indeed, my mother was Italian and my father fell in love with Italy and Italian cuisine around the same time as my mother… As a family, we traveled around Italy. Mainly from the north: Veneto, Lombardy, Emilia-Romagna, Tuscany, … and experienced a host of restaurants.

Thirty years later, it is their daughter Stéphanie who is in charge of this Liège address, which has managed to maintain its qualities by making a point of cooking the best products. And with complete simplicity, in order to reveal the original flavors. Although it is more a question of passion than of honor. A passion passed down and which has also evolved. I do what I like. I like that we feel light when we leave here“, underlines the chef, who also lets her whimsical side express itself. Like when she makes, for certain dishes, her fresh pasta with white spelled flour from Counasse in Chauveheid.

The family recipe for osso buco cooks for a good two hours with celery, carrots, a few tomatoes and a touch of orange is still simmering in the kitchens. But it has been a few years now that she has also been bringing in the good vegetables of the sun, picked from producers near her home. “Tomatoes, zucchini, aromatic herbs. It’s a lively and healthy cuisine that I also enjoy. Sometimes also depending on the mood of the day.

In 2024 La Cantina celebrates its thirtieth anniversary. For the occasion, she is offering a birthday menu at €30 per person for three courses (3 small antipasti, a choice between two pastas and a choice between two dishes). One more incentive to open the door, to smile at the considerate welcome from Fatima, always faithful to the post for 25 years, and to let yourself be (re-)seduced by fresh, authentic and more balanced cuisine. With a selection of wines that accentuates the sunny journey to an endearing place.
