A study showed that consuming three servings of kimchi a day helps reduce the risk of obesity in men. It was analyzed that this was due to the abundance of lactic acid bacteria contained in kimchi.

The joint research team of Shin Sang-ah, a professor in the Department of Food and Nutrition at Chung-Ang University, and Hong Seong-wook, director of the Kimchi Functional Research Center at the World Institute of Kimchi, published their research results in the international academic journal ‘British Medical Journal (BMJ) Open’ on the 31st. The World Kimchi Research Institute is a government-funded research institute under the Ministry of Science and ICT.
Lactobacillus brevis and Lactobacillus plantarum, which are abundant lactic acid bacteria in kimchi, are known to have anti-obesity effects. The research team conducted an experiment to determine whether regular consumption of these lactic acid bacteria through kimchi was effective in reducing the risk of obesity.
The research team analyzed data from 115,726 people who participated in the Health Examination Study (HEXA) conducted in Korea. The gender of the subjects was 36,756 men and 78,970 women, and the average age was 51 years old. HEXA is a long-term study targeting Korean adults over 40 years of age to track the impact of environmental and genetic risk factors on their health.
The standard serving of kimchi is 95g for nabak kimchi and dongchimi, and 50g for cabbage kimchi and radish radish kimchi. Obesity was defined as body mass index (BMI) of 25 or higher. Abdominal obesity was determined as a waist circumference of 90 cm or more for men and 85 cm or more for women.
The results of the analysis showed that participants who consumed more than five servings of kimchi per day weighed more than those who consumed less than one serving. Their waist size was larger and they were more likely to be obese. They were less highly educated, had lower incomes, and were more likely to drink alcohol.
People who ate up to three servings of kimchi a day had a 10% lower prevalence of abdominal obesity than those who did not eat kimchi. Among men, those who consumed three servings of cabbage kimchi per day had a 10% lower prevalence of obesity and abdominal obesity than those who consumed less than one serving per day. For women, the prevalence of obesity decreased by 8% when they consumed 2 to 3 servings of kimchi per day. The prevalence of abdominal obesity among women who consumed 1 to 2 servings per day decreased by 6%.
In the case of radish radish, consuming less than one serving per day was associated with a lower risk of obesity than when not consuming it. People who ate 25g for men and 11g for women had an 8% and 11% lower risk of abdominal obesity, respectively, than those who did not eat kkakdugi.
The research team explained that separate research is needed to determine why kimchi helps reduce the risk of obesity. He also added that even though the various benefits of kimchi have been revealed, it is not advisable to unconditionally increase the amount consumed.
