When I make kale stew at home, the middle one of our family is cheering on the couches, the oldest man is already starting to grab his phone to order food and the youngest is acting like Switzerland. In other words, their emotions regarding the phenomenon of ‘stamppot with kale’ were not completely synchronized ;-).
I wanted to change that, because I really love kale stew and I prefer it once or twice (okay, just often) during the winter period. So I dove into the kitchen and started experimenting with different flavors and textures. Because that often solves such synchronization challenges in our household.
The result is this kale stew with curry onions and fried smoked sausage that has been approved by all the men in the family! The basic preparation of the stew is the same as the traditional preparation, I just added a lot more spices. And then stirred in braised curry onions and topped everything off with fried smoked sausage and fried shallots. Enjoy it!

Peel the potatoes, cut them into equal chunks and rinse them in a colander. Then put them in a high (soup) pan together with the maggi cubes and garlic. Add water until the potatoes are just covered. Divide the fresh kale over the potatoes and sprinkle the 1 teaspoon allspice powder, 1 teaspoon curry powder, and 1 teaspoon paprika powder on top. Finally, the lid goes on and you bring the contents to a boil. Then let it cook on medium low heat for regarding 25 minutes until the potatoes are tender and the kale is cooked through.

Meanwhile, heat a frying pan and fry the bacon in it first until they start to become crispy, then scoop out of the pan.

Melt 25 grams of butter in the same pan and fry the onions with 2 teaspoons of curry powder, 1 teaspoon of cumin powder and a pinch of salt for 10 minutes on medium heat. The onions should braise, not fry. Lower the heat if you see them browning too quickly. Then add the pieces of smoked sausage, increase the heat slightly and stir-fry for another 5 minutes until the pieces of smoked sausage become slightly crispy. Finally, stir in the bacon once more and turn off the heat.

When the potatoes and kale are cooked, drain all the water. Heat the milk and pour it into the pan, also add the remaining 25 grams of butter in cubes. Mash the entire contents with a pestle (including the garlic) and then fold in the fried onions with smoked sausage and bacon.

Taste the kale stew and season it to taste with white wine vinegar, black pepper and optional salt. You can always add a splash of warm milk if you want the stew even more creamy.

Serve the kale stew in deep plates and garnish with fried shallots.

- Prefer vegan? Then leave out the bacon and replace the smoked sausage with a vegetarian variant or bake cubes of tempeh with sweet soy sauce and crispy sambal as a topping.
