(CNN) — An Indian street food restaurant in Asheville, North Carolina, and a black chef at a fine-dining restaurant in Savannah, Georgia, won two of the top awards in the American culinary community on Monday night.
Mashama Bailey, chef at The Gray restaurant in Savannah, is the winner of the 2022 James Beard Award for Best Female Chef.
“Black and brown people, immigrants, mom-and-pop stores have been bubbling under the surface of this industry, working hard for a long time to establish our place in American food. I’m standing on the backs of so many of them and today a girl or a black child can see themselves as future recognized chefs,” Bailey said in accepting the award.
Chai Pani, an Asheville restaurant serving bright, crispy Indian street sandwiches, won the James Beard Award for Most Outstanding Restaurant.
“Restaurants are so much bigger than the sum of what’s inside their four walls. A restaurant has the power to transform: transform the people who work there, transform the people who walk in, transform the communities we’re in.” , transform society. Restaurants can transform the world,” said Meherwan Irani, chef and founder of Chai Pani, which also has a location in Decatur, Georgia.
The James Beard Awards ceremony for restaurants and chefs was held Monday night at the Lyric Opera in Chicago.
Chicago Mayor Lori Lightfoot welcomed the awards ceremony to Chicago, saying it reinforced the city’s gastronomic bona fides. She was one of many speakers who spoke regarding the difficulties caused by the covid-19 pandemic.
“Their effort, dedication and resilience … in overcoming the challenges of this great pandemic is a testament to the proverb: ‘What doesn’t break you makes you stronger.'”
The 2022 awards are the first to be awarded under new policies and procedures and a new code of ethics prompted by allegations of inappropriate chef behavior and lack of diversity.
Awards in many key categories were abruptly suspended in 2020 and put on hold in 2021 amid industry upheaval and the foundation’s work on the new framework.
The nonprofit James Beard Foundation was created more than 30 years ago, shortly following the death of “food pioneer” James Beard, “to celebrate, support and uplift the people behind America’s food culture.” Joined”.
Beard was the host of “I Love to Eat,” the first network television food show in 1946, and was called the “doyen of American cuisine” by The New York Times in 1954.
