It’s a trend on our plates! Vegetables are quite popular at the moment in restaurants, even gourmet ones. Among the best vegetarian restaurants in the world, two Belgian chefs distinguished themselves last week… including a Walloon one.

In the garden of this chef’s restaurant, a gold mine of vegetables: more than 400 varieties in total. We might as well tell you that this chef is truly passionate. “I think we might eat just that“, she explains.

She is not the only one to think so: in recent years, her vegetarian menu has never attracted so many curious people. In fact, reservations have even tripled. “Everyone is starting to become aware of what goes into food, especially processed food.“, explains Arabelle Meirlaen, starred chef.

In 2019, only 15% of Belgians admitted to eating 5 fruits and vegetables per day. But according to this specialist, mentalities have evolved. At the heart of his garden, thousands of vegetables have now become real stars in the restaurant. “Before the norm was a plate of meat with a single vegetable. Today, we are really in the opposite system“, explains Benoit Blairvacq, market gardener.

And then the vegetables also keep longer. In his fridge, Benoît keeps hundreds of vegetables: summer tomatoes, for example, might very well be eaten this winter.
