In a recent Spanish study, researchers compiled the results of all the health benefits linked to the consumption of olive oil. The team made up of researchers from the Faculties of Pharmacy and Medicine of the University of Seville, in collaboration with professionals from the health district of Seville North and Aljarafe and from the Costa del Sol Hospital published these results in the journal Nutrients.
Oleic acid: very present in olive oil
As the researchers explain, this health benefit of olive oil comes from its high presence in oleic acid. The latter, the main constituent of olive oil, is naturally there. This is a fatty acid, which have many beneficial properties for health.
“This fatty acid is the main component of olive oil (70–80%) and is the source of its many healthy properties,” the study details. The researchers add, “Oleic acid is produced both by food and by endogenous synthesis (which originates inside the organism). The latter is monounsaturated fatty acid (MUFA) most abundant in the human diet and, endogenously, it is the main type of omega-9 monounsaturated fatty acid“.
