On iPhones with 3D Touch
iPhone models equipped with 3D Touch can use the feature more easily. First of all, make sure your model fits this case:

In these cases, when you’re typing something in any iPhone app, just press hard on any area of the keyboard to activate trackpad mode. You can, for example, select text by simply tapping and holding the keyboard with a second finger, then moving your first finger across the keyboard, adjusting the selection.
On iPhones without 3D Touch and iPads
From the iPhones XR, 11 Pro and 11 Pro Max, Apple retired the component responsible for 3D Touch — which never reached the iPads. In such cases, the process of using the keyboard as a trackpad changes slightly.
Just keep your finger pressed on top of the space bar on the keyboard for a few seconds so that the keys “disappear” and the area is transformed into a trackpad. Then just make the necessary adjustments to the text.
