How to make potato gnocchi

Potato gnocchi are easy to prepare. The key to making them come out soft and tender is not to overdo the amount of flour. During cooking, when they rise to the surface, they are ready!

Fill a saucepan with cold water and add the potatoes and half of the coarse salt. Boil 20 minutes, or until the potatoes are tender. Drain them and let them cool a little (not completely).

In a bowl, form a crown with the puree. Add the eggs, salt, pepper, nutmeg and baking powder in the center. Add the flour little by little, and with your hands, using a spatula, from the outside in, until a homogeneous dough is formed.

Make rolls with the dough one and a half centimeters thick. Cut them into 2 centimeter pieces and give them the classic shape with the gnocchi marker, or with the fork.

Cook the gnocchi in boiling water with a splash of oil and the remaining coarse salt. They will be ready when they rise to the surface. Remove them with a slotted spoon. Serve alone or with the sauce of your choice.
