Chefs have revealed how to make minced beef more fluffy

May 28 – NVL. Now cutlets made from ground beef will definitely not turn into a “stone”: just chop this fruit and mix with twisted meat

In beef, unlike chicken or pork, the fibers are much thicker, so it is quite tough. Most housewives try to process this meat for minced meat. But you also need to be able to work with ground beef, since there is still a risk that the dish will become “stone” following cooking.

To make minced beef more lush and juicy, cooks advise adding a simple fruit – an apple. It gives the meat porosity, as well as a rich taste and aroma.

For the preparation of minced beef, sour apples are suitable: “Champion”, “Gala”, “Red Chief”. But it is better not to use sweet varieties: they will sweeten the product. One apple is enough for 600 grams of meat. The fruit is ground on a grater and then mixed with twisted beef. For softness, cooks are advised to pass the meat through a meat grinder 2 times. For juiciness, you can add butter or twisted lard to ground beef. You can also improve the taste of a meat dish with your favorite greens: green onions, parsley or dill.

According to this recipe, the famous burger patties are prepared. To repeat the recipe yourself, you need to take 200 grams of ground beef, 1 tablespoon of butter, 2 tablespoons of olive oil, half an apple, salt and black pepper to taste. The amount of ingredients is designed for two large meatballs.

The meat is twisted twice in a meat grinder, then the apple is crushed, previously peeled and core. Soft butter, salt, pepper and olive oil are added. Minced meat is mixed for 10 minutes to saturate with air, and then the cutlets are fried as usual.

Cutlets can be used to make burgers or as an independent meat dish, which is complemented by a side dish or vegetable salad.
