It is a dish that is wrapped in leaves that many take on trips and They eat it wherever they stop; They just uncover it and taste it.

It is also known as tziuk’al, because the recipe is prepared in the pot where the tamales are cooked, remaining in this way at the mouth of the pot, says chef Isabel Rubio Mackpeace, who prepared this dish from San Juan Cotzal and Chajul, Quiché. “It is very tasty and colorful,” highlights the chef.

Ingredients

12 maxán leaves

1 Creole hen

1 pound of tomato

1 chili raisin

1 chile guaque

1 chile cobanero

1 ounce sesame seeds

1 ounce of pepitoria

3 garlic cloves

Salt to taste

Preparation

Wash and disinfect the maxán leaves. Then, cut the Creole chicken into pieces and set aside.

Roast the tomatoes, along with the different chilies; Also, include sesame and pepitoria. Traditionally, these ingredients are ground on a grinding stone to make the meal, although you can use a blender or processor for this purpose.

For the wrapper, use a maxán leaf as a base. Place a portion of chicken on top, in the center, and cover it with the message.

Fold evenly to prevent the mixture from spilling. Secure with cibaque, a fiber used to tie maxán leaves.

Cover the bottom of a pot with maxán leaves, place the wrapped portions and fill halfway with water.

Finish covering with more maxán leaves and let cook for an hour, over low heat.
