Ingredients for a classic cake mold

200 g crushed dried fruits (almonds, hazelnuts, pistachios, etc.)
200 g of fresh fruit (apples, dates, apricots, grapes, etc.)
200 gr of flour
1 packet of dry yeast
100 g of vanilla sugar
3 eggs
100g melted butter
1 teaspoon of cinnamon
The juice of a lemon and an orange + some zest if you like

Preparation

Preheat the oven to 160°C.

Cut the fruit into small cubes. Put them in a bowl with the fruit juice, cinnamon, sugar and zest. Mix and leave to macerate for at least twenty minutes.

Roast the crushed dried fruits for a few minutes in the pan, without fat. Let cool.

Mix the flour and baking powder.

In a bowl, beat the eggs then add the cold melted butter. Mix well. Add the flour. Mix. Add the fruits with the marinade, the dried fruits, and mix once more. You should get a thick paste.

Pour into the well-buttered cake mold. Place in the oven and cook for approximately 45 minutes.

Let cool on rack.
