The 29th edition of the contest International Gourmand Awards recognized the book “El Sabor Chapín” with second place in the Latin American countries and regions category.

Volume I of the Guatemalan gastronomic dictionary of savory dishes, The Chapin Flavora project created and edited by the Guatemalan Academy of Language, was recognized with second place in the Gourmand World Cookbook Awards 2023 in the Latin American category.

The book was presented internationally at the Royal Spanish Academy in May 2023 so that both the national and international community know the most emblematic dishes of the country.

Raquel Montenegro Muñoz, director of the project, commented that the interest in creating this book is to define the word, clarify if they have geographical variation and if the dish is named in different ways depending on the location of where it is made, as well as highlight if the dish has some distinction of intangible heritage.

The dictionary has a glossary with the idea that whoever reads it outside the country can identify the ingredient being talked regarding, in addition to placing photos of the dishes as an illustration.

To carry out this project, we had the help of chefs, including the Guatemalan chef and educator Euda Morales, who gave technical advice to define the words and avoid making mistakes in the publication, and Dr. Marta Torres Martínez, specialist in gastronomic lexicon. from the University of Jaén, Spain. Both professionals wrote preliminary studies included in the dictionary.

Montenegro commented that this is Volume 1 of savory dishes and they are currently working on Volume 2 where traditional sweet dishes from the country will be addressed.
