Delicious all those goodies at Easter, from Easter bread at breakfast to chocolate Easter eggs at tea. And don’t forget the extensive Easter brunch and the cozy evening meal together. We are still in the middle of it at home and I enjoy it immensely.

But I also know that I would like to balance the rest of the week a bit. Both in terms of dishes that are lighter and contain a lot of vegetables, but also in terms of shopping. With that in mind, today I have a new weekly menu that is completely balanced. Of course there is still a festive dish for this Easter Monday, but after that comes the balance, whereby I also take into account that there may still be some leftovers in the house.

In the weekly menu you will find perfectly baked salmon with lemon spaghetti for this second Easter day and homemade tomato soup with basil for the day after, serving a platter of leftovers from Easter. The rest of the week we eat healthy noodles with chicken and vegetables, stir-fried green beans with baby potatoes and gremolata and chicken stew with tomato and zucchini. At the weekend I make a particularly tasty sandwich with halloumi and jalapeño shallot spread and on Sunday morning we have breakfast with wholemeal pancakes that are very ‘balanced’. Enjoy!
