Nõo Lihatö¶stuse technologist and acclaimed chef Marko Kokmann prepared innovative Estonian snacks for the Republic Day party table instead of breadcrumbs.
Boiled salami with sauerkraut salad and chive spread on black bread
Ingredients for the amount of 14 pcs.:
- Sauerkraut with carrots – 150 g
- Nõo Vasalli boiled salami – 1 pack
- Sugar or honey – 10 g
- Toiduõli – 10 g
- Must pepper – 0,5 g
- Lime juice – 10 g
- Cream cheese – 100 g
- Karulauk – 10 g
- Black bread – 7 slices
- Dill – to taste + a little for decoration
Preparation:Â
Mix sauerkraut, sugar or honey, cooking oil, black pepper, lime juice, dill and season with salt if necessary. Cut the bread in half diagonally. Mix together chives and cream cheese or use store-bought cream cheese seasoned with chives and spread it on slices of bread. Then, fold the slices of cooked salami in half and place them on the bread. Top with sauerkraut salad and decorate the snack with a sprig of dill.
Roulade with marinated pine rice salad on seed bread
Ingredients for the amount of 14 pcs.:
- Marinated pine nuts – 100 g
- Nõo roulade sliced - 2 packs
- Red onion – 30 g
- Parsley – to taste + a little for decoration
- Cream cheese – 200 g
- Tomato paste – 15 g
- Cherry tomatoes – 4 pcs
- Pune – according to taste
- Seed bread chips – 14 pcs
Preparation:
Chop red onion, marinated pine nuts and parsley into smaller pieces, mix with cream cheese, oregano and tomato paste. Put the salad on seeded bread chips, roll the Nõo roulade slices into a roll and place them in turn on the salad. Garnish the snack with cherry tomatoes and parsley.
Full-smoked sausage cream in a crusty bread basket
Ingredients for the amount of 24 pcs.:
- Nõo Wabariikki full-smoked sausage – 200 g
- Cream cheese – 200 g
- Dill – to taste
- Küüslauk – 5 g (1 küüs)
- Lime juice – 10 g
- Värske tÅ¡illi – 10 g
- Dijon mustard -10 g
- Radish – 3 pcs
- Crust bread baskets 24 pcs
Preparation:
Crush the whole smoked sausage into a fine mass with a kitchen cutter or shredder. Mix the resulting mass with chopped dill, garlic and fresh dill and add cream cheese and Dijon mustard. Place the cream in the crust bread baskets using a small spoon or piping bag. For decoration, cut radish slices.
Lava rolls with boiled salami
Ingredients for the amount of 16 pcs.:
- TäisteralavaÅ¡Å¡ – 1 pc (120 g)
- Nõo boiled salami – 2 packs
- Processed cheese – 150 g
- Grated Parmesan cheese – 30 g
- Mixed green salad – 1 box
- Blue cheese – 80 g
- Pin – 1 tk
- Fresh cork – 150 g
Preparation:Â
Mix the parmesan with the melted cheese and spread the mixture evenly on the stage. Place the sliced pear and cucumber on top of it and all the other components in even layers. Roll the lavašš together with the ingredients into a tight roll and let it harden for 10-15 minutes. To serve, cut the roll into mouth-watering slices.
