Ingredients for the dough:

– 315 g of flour without baking powder

– ½ cdta sal

– ½ tsp sugar

– 1 ½ tsp instant dry yeast

– 180 g warm water

Ingredients for the toppings (optional):

– Olive oil

– Ketchup

– Fresh mozzarella

– Italian zapallito

– Ricotta

– Lemon zest

– Peaches

– Honey

– Cayenne flakes

Preparation of the dough:

1. Add the flour, salt, sugar and yeast to a bowl and mix. Add the lukewarm water (it shouldn’t be hot, just lukewarm, otherwise it could kill the yeast), bring the dough together and knead. If you are using a stand mixer: knead for 7 minutes at minimum speed. If you knead by hand: knead for 10 minutes. It should be a very soft dough and not sticky at all.

2. Transfer the dough to a lightly oiled bowl, cover with kitchen plastic wrap and leaven for 1 hour or until doubled in volume.

3. Crush the dough to degas. Divide the dough into 3 equal parts and work with one dough at a time, keeping the others covered to prevent them from forming a crust.

4. Stretch the dough on a lightly floured counter using a uslero so that it is oval (or the way you prefer). It should be a very thin dough, about 4 mm thick.

5. Transfer the dough to a baking tray prepared with parchment paper or a silicone mat. Flatten using the tips of your fingers (like making focaccia), to ensure that it is evenly stretched.

6. Brush with olive oil, spread tomato sauce, and add fresh mozzarella to taste.

7. Bake in a preheated oven at 240ºC for 15-20 minutes or until lightly golden. You can also cook it on an oiled grill, approximately 1 minute per side until it looks golden or using a grill pan. Salt and pepper the zucchini.

Preparation for the toppings:

1. Slice the zucchini lengthwise, using a mandolin or a knife, making sure they are thin. Cut the peaches into segments. Grill the zucchini and peaches in a preheated grill pan and brush with olive oil. Once you see that they have the grill marked, turn them over and grill on the other side.

2. When the flatbread comes out of the oven, distribute the zucchini on top, add ricotta balls, lemon zest on top of the ricotta, grilled peaches, honey and flaked cayenne to taste.
