“La table de Cana” now has a branch in Valence. This network of solidarity caterers delivers cocktails or meal trays to companies and at the same time trains people who are unemployed in catering professions. The idea, ultimately, is to help them find a contract in the world of catering.
In the middle of preparing lasagna, Assanatou will soon be a professional chef. This woman arrived from Guinea recently: “following my training, maybe I will open my restaurant with African and European specialties here or at home in my country”.
Varied profiles
Like Assanatou, the Table de Cana plans to train around ten people in integration per year. They are mainly migrants, women who find themselves alone with the need to work and young people with difficult backgrounds. All are supported by head trainer Anne-Charlotte Decroix: “we will cook like in a restaurant, learn how to prepare recipes, sauces or even pastries”.
Meal trays, cocktails…there will be no shortage of opportunities to really work for these apprentice chefs, but that will only last for a while. “They will stay 14-15 months on average and the idea is to help them find a job with another caterer or with a restaurateur“, recalls the manager of the Table de Cana in Valence, Clément Nicot. This should not be too complicated given the shortage of labor in the sector.
