The most direct answer is: you need to choose the tastiest dulce de leche possible. After all, in recipes like this, this will be the most striking flavor.
In any case, my recommendation is to opt for one with a firmer texture, this way your mousse will have more texture.
Coloring can vary greatly from brand to brand, but it does not directly affect quality. Therefore, it is likely that you will notice that your mousse has a different color to ours, and that is okay!

Instructions
