Ingredients
– 70 g flour 0000
– 30 g corn starch
– 100 g processed walnuts
– 90 g powdered sugar
– 100 g cold butter
– vanilla to taste (optional)

Preparation

In a bowl, mix the dry ingredients: flour, starch, processed nuts and sugar. Add cold butter in squares and vanilla. With your fingertips form a sandblast. Let the dough rest in the refrigerator for half an hour.

Stretch and cut into circles. Arrange each alfajor tapa in a baking dish, well separated from each other, as they expand in the oven. Put the dish first in the freezer for 15 minutes (so they don’t warp in the oven). Then in a moderate oven for 15 minutes or until the edges are golden. Let cool on a rack and then fill with pastry dulce de leche.
