Olivier Colot hasn’t had time to install everything yet, but he’s already welcoming us to the new premises of the Brasserie de l’Oubéwé: “everything is almost ready”, he reassures. Its new brewery is settling in the new Tubize II zoning and is therefore definitely part of the municipality: “I have been a Tubizien for 25 years, I want to make Tubize beer out of it”. Previously, Oubéwé was a custom beer, a recipe entrusted to a brewer and whose owner takes care of the marketing. But now that Olivier has taken over the business, the brewing, he does it himself.
Olivier Colot is a social worker. He decided to put his career on hold to devote himself to this great project: “beer, I fell into it when I was little”. A long-time amateur, Olivier is also a collector: “I have over 5000 bottles of beer in my house”. And the passion goes even further because Olivier has already published two books on brewers and breweries, one for Tubize and another on Waterloo and Braine-l’Alleud. Notice to historians, he intends to continue to write and extend to other municipalities. He intends to tour the communes of Oubéwé, understand the west of BW. The name is therefore not chosen at random for the brewery and is even thought for the foreign market: “With Oubéwé, I wanted a name that the French would find difficult to pronounce. I would be happy to hear someone talk regarding ‘l’Oubévé’ one day” laughs Olivier.
To get there, the zythophile started at the bottom. First with friends, they were brewing at 5-6 at his house. Then Olivier started with a few vats and scoured the markets. Besides, he prides himself on having had “thehe smallest brewery in Belgium” with its first production installed in a 3 m² trailer: “This mobile installation allowed me to breaststroke directly in front of the customers.”. Mobility is in the brewery’s DNA. Olivier bought a small van from 1926 which he gave to the colors of the brewery. He hopes to be able to use it one day to transport his cargo: “I would like to create a legend around this van, it looks like the ones used during prohibition in the United States. I would like to make believe that it was used by Al Capone”.
Oubéwé is the only beer produced by the brewery. It is a triple of 8% slightly amber, sweet with some floral or even honey notes. Olivier is proud of it as of all the efforts made to get there. And when asked what his future aspirations are, he simply replies: “be happy !”. Successful bet so far.
Olivier gives an appointment to the Tubiziens on Saturday June 3 at the brewery, in the Tubize II zoning in order to introduce the facilities to enthusiasts and amateurs just like him.
