Discover the New Chef and Cuisine at La Table du Moulin in Lavoir

This kitchen, he does not know it yet. However, Alexandre Malato did not hesitate to set up in the kitchen to offer his first dishes… for testing. He is the new chef of the restaurant La Table du Moulin, at the Moulin de Ferrières in Lavoir. Although he will only delight the taste buds of his customers from August 17, he discovers a little more each day his future restaurant and the region that surrounds it.

The Moulin de Ferrières, closed since last January, was impatiently awaiting its new chef, just like its new baker whom it found a few weeks ago. When the former chef filed for bankruptcy with the restaurant and bakery, it didn’t take long for the candidates to come forward. And among them, Alexandre Malato who was then a chef in a restaurant in Grâce-Hollogne. “At home, we especially felt a real motivation”explains Raphaël Villafrate, from the Héron Local Development Agency.

A first visit to the Moulin de Ferrières convinced Alexandre Malato that this place was made for him. It remained to bend his companion, Carole Stappers, who knew the place as she works at the Golf de Naxhelet. “I had heard of the project, of the empty restaurant that was waiting for its chefshe explains today. I said “no” three times. The fourth time, we both came on site. I see him passionate, I see the love he puts on his plates.” It was enough for her to follow her companion in this new adventure.

And since then, the chef of La Table du Moulin has come on site several times, imagined himself in this new cuisine but also had to organize his departure from the restaurant, Lo Sfizio, where he is chief chef in Grâce-Hollogne. He, who is of Sicilian origin, wants to offer La Table du Moulin a cuisine that resembles him.

Very early on, Alexandre Malato started cooking. In a relationship for 21 years, he has always cooked at home. This passion, he decided to make it his job only a few years ago. After training at IFAPME three years later, he moved to the kitchens in Grâce-Hollogne. And there, now, he will have his own restaurant. Going from the city to the countryside, a family project they both had. “We always wanted to settle in a rural areaexplains Carole. We didn’t do it because of the children, we didn’t have the heart to uproot them. We just weren’t ready yet.” But there they are, at least professionally speaking.

The cuisine of its origins but not only…

If he already put his heart into the kitchen, Alexandre will put even more behind his Héronnais stoves. He will work with his family even if he intends to hire in the gym and get help from students and trainees. His companion will take care of the administrative part while managing the “back-up” in the kitchen. He, the chef, will prepare his dishes. It intends to offer Mediterranean cuisine “but not only. I like to cook fish, meat, everything that is simmered, too.” His menu, the chef will modify it every month in order to offer a variety of dishes. He will buy from local producers and will not offer excessive prices. “We want to attract families, tourists and that they do not come out of our house being ruined.”

La Table du Moulin will open its doors for the first time on Thursday 17 August. With, just a few days later, on Sunday August 27, the Garden-party, the first activity with which the restaurant will be associated.
