Discover the Art of Maamoul Making: From Traditional Recipes to Handcrafted Wooden Molds

The place smells good as Palestinian women gather to make date-stuffed cakes called “ma’moul” which is one of the rituals of Eid al-Adha.

While the carpenter Ahmed Idris is busy making wooden molds for the purpose of decorating cakes in different shapes and molds that address all tastes.

A craft that he inherited from love and passion to continue the journey that his grandfather started years ago in the city of Hebron in the West Bank, to make the young craftsman, who is passionate regarding cutting wood, artistic masterpieces made with love by his fingers.

Driss sells his products domestically and abroad through his Instagram page. He says: “I have been in this craft for nearly 15 years.. Years have passed and I dealt with wood with love. I grew up in the profession of making maamoul molds, which is an industry and a family profession that was inherited by generations of the family, from grandfather to grandfather.”

Regarding the forms of development that have been introduced to the craft, Cheb Ahmed said, “Today we are working more on giving molds different shapes and personalizing them.. We combined the heritage that we are proud of with what urban and technological development offers, especially with the presence of lasers, to produce a wonderful mixture and artistic masterpieces.” “.

The traditional Eid maamoul consists of a dough made of semolina and natural ghee. Butter is used as a substitute for it. The “mahlab” is added to the dough, which is an extract that gives the maamoul a distinctive flavor in addition to the Arabic mastic. It is then stuffed with dates, walnuts and pistachios.

The women gather in the “Houses of Happiness” charitable association in Hebron, and enjoy their time baking hundreds of kilograms of maamoul, to sell them in stores or to individuals.

Umm Imran Badr said: “Our ancestors in the old days used wood in all kitchen utensils and with simple tools they made beautiful things and shapes that are still today before they got acquainted with the current plastic and metal utensils.”

Before the Eid holiday, family members gather and prepare cakes and involve children, relatives and neighbors, a tradition that adds joy to the celebration of Eid and leaves beautiful memories.

Regarding the maamoul, Idris says, “Buying wooden molds adds another flavor and joy to the feast… We all remember the feast days in our childhood and the feast cakes (with fathers or with mothers).”
