This is the most greedy announcement of this end of summer. From this Saturday, August 26, 2023, Wally’s Coffee will open its cookie shop. It will be located in the famous coffee shop, located at 133 rue du Molinel in Lille.
Wally’s Coffee is renewed again!
This good news largely compensates for the end of the holidays and the start of the new school year which is fast approaching. From this Saturday, August 26, Wally’s Coffee is launching a new 100% cookie offer. During the summer, the coffee shop carried out work to install a stand dedicated to this essential pastry.
It must be said that since its opening in 2014, first at Place Philippe Lebon before moving to Rue du Molinel, Wally’s immediately caused a sensation with its delicacies: the famous Freakshake, and of course the cookies!
In a perpetual quest for renewal, the founder has once again created a surprise. But it is also for economic reasons that this corner was imagined.
“The period of Covid 19 had a severe impact on us and with the very late recovery, the need to recruit to revive the activity, we found ourselves in a difficult financial situation”, explains Wally in a long message published on social networks.
So to raise the bar, the entrepreneur had the idea of launching this cookie shop, mainly dedicated to takeaway sales.

Gourmet and balanced cookies
Wally’s cookies, which some customers consider “the best on the planet”, are the specialty of Rosy, an essential member of the team. It is therefore quite naturally that this shop bears the name of “Rosy’s Cookies”.
“We always wondered when we were going to do something special with our cookies. Lo and behold, after 8 years, the time had come. It is also an opportunity to reward Rosy after all these years of hard work, by dedicating this space to her where she will always be able to welcome you with her most beautiful smile and incredibly delicious recipes”, continues the creator of the coffee shop.

For the shop, the recipes have therefore been revisited. “We were inspired by Levain Bakery, Crème… But it’s our basic recipe, we modified the quantities of the ingredients. They are bigger than our classic cookies, they weigh no less than 150 grams,” explains Wally. In addition, the quantities of sugar and butter have been reduced to find the right balance.
The store will offer “2-3 classics and ephemera depending on the season,” says Rosy. For the opening, 4 recipes are available:
“Lebon Cookie”: dark chocolate, fleur de sel; “Where is Pecan? »: dark chocolate, pecan nuts; “Moka Blend”: homemade blend, dark chocolate, cocoa; “Nanga Def” (which means “how are you?” in Wolof, a nod to Senegal): dark chocolate, white chocolate, cocoa, peanuts.
Count from 4 to 4.50 € per cookie, very generous. Something to have fun for a snack, to devour at home or at the office.
In addition to the take-out sale, the founder announces that cookies will soon be available for delivery.
