Cheesy Creamy Mushroom Toast

Ingredients

200g mixed wild mushrooms
2 shallots, finely chopped
1 tsp garlic paste
100ml vegetable stock
2 tbsp mascarpone
1 handful tarragon, chopped
4 slices sourdough bread
250g halloumi cheese, cut into 4 thick slices

Method

1 Heat a little olive oil in a pan, add shallots and saute for 5-10 minutes until soft, then add wild mushrooms and continue to fry until softened.
2 Add garlic paste and vegetable stock, simmer for a few minutes until the sauce reduces, then add mascarpone and most of the tarragon, stirring until well combined.
3 Grill or pan-fry the halloumi cheese until golden brown on both sides.
4 While cooking the mushrooms, you can toast the sourdough slices simultaneously, then layer the mushrooms and sauce on the toasted bread, top with the grilled halloumi and sprinkle with a little extra tarragon.

Creamy Exotic Mushrooms on Toast with Tarragon and Halloumi

250g Cypriot halloumi, cut into 4 thick slices

Method

1 Heat a little olive oil in a pan, add shallots and sauté for 5-10 minutes until soft. Then add mixed exotic mushrooms and cook until softened.
2 Add garlic paste and vegetable stock, simmer for a couple of minutes until the gravy is reduced. Stir in mascarpone and most of the tarragon until fully combined.
3 In a griddle pan or under a medium grill, cook Cypriot halloumi until nicely golden on both sides.
4 While mushrooms are bubbling away, toast sourdough bread slices. Top with mushrooms and sauce, a slice of halloumi, and a sprinkle of extra tarragon.
