Ingredients
To create these delightful mini pizzas, gather the following ingredients: 500 g of buttery puff pastry, 1 tablespoon of high-quality olive oil, 200 ml of rich tomato sauce, 1 finely chopped garlic clove, 1/2 teaspoon of aromatic oregano, 4 fresh basil leaves, 1 egg, 1 tablespoon of finely grated Parmesan cheese, a handful of both green and black olives for a burst of flavor, 5 champignon mushrooms that have been lightly roasted to enhance their earthy taste, and 100 g of shredded mozzarella cheese for that gooey, melty finish.
Preparation
1. Start by preparing the pizza sauce: In a small pot, heat the olive oil over medium heat, then add the minced garlic and fragrant oregano. Sauté for half a minute until aromatic, then pour in the tomato sauce. Bring the mixture to a gentle boil, and once bubbling, stir in the fresh basil. Season the sauce thoughtfully with salt and a touch of sugar, then remove it from the heat to allow the flavors to meld.
2. For the pastry cups, roll out the puff pastry on a floured surface to ensure it doesn’t stick, then cut out 4 circles with a diameter of 9 cm—the base of your mini pizza. From each larger circle, cut out a smaller circle with a 6 cm diameter and carefully mold the ring into a cup shape to hold your delicious fillings. Additionally, prepare 8 more circles of 9 cm in diameter to serve as the supporting base.
3. To create a sturdy base, place 2 of the dough circles beneath each pastry cup, ensuring they hold their shape while baking.
4. The next step is crucial: bake the cups in an oven preheated to a crisp 170 degrees Celsius for approximately 30 minutes, or until the pastry cups achieve a beautiful golden-brown color.
5. Once out of the oven, it’s time for creativity—fill each pastry cup with an array of toppings. One option is to spoon in the flavorful pizza sauce, followed by mozzarella and a handful of green olives; alternatively, crack an egg into one cup and sprinkle with aromatic Parmesan cheese.
6. After filling, return the mini pizzas to the oven and bake for an additional 5 minutes, or until the cheeses are tantalizingly golden and bubbling.
