  • 4 eggs (1.04€)
  • 800 g of leeks (2.39€)
  • 50 cl of whole milk (0.63€)
  • 20 cl of full liquid cream (0.85€)
  • 100 g of grated Emmental in a bag (0.76€)
  • 150 g of fresh goat cheese in a tray (€1.61)
  • 200g of puff pastry (0.69€)
  • Oil, salt and pepper

Preparing the leek and goat cheese quiche by Cyril Lignac

  1. To start, preheat the oven to 190°C. Butter the quiche mold or unroll a sheet of parchment paper and place the puff pastry by extending the edges to shape them into a twist following having filled it. Leave to rest in the refrigerator.
  2. Heat a line oil in a pan, add the leek cut into rings, salt and pepper. Let it simmer until it becomes tender. Transfer to a dish and let cool.
  3. Mix the eggs, milk and cream in a bowl. Add it fresh goat, Salt, pepper, and mix well. Set aside.
  4. Pour the leeks over the puff pastry in the mould, add the grated Emmental cheese and cover with the liquid preparation. Bake for 45 minutes. Serve warm with a green salad.
