In the aptly named rue du Champ des Vignes in Lasne, three particularly motivated young entrepreneurs have decided to make a dream come true: cultivate a vineyard and produce a sparkling wine according to the Champagne method.
They therefore acquired ten hectares of agricultural plots, eight of which are now planted. After working the land, studying sunshine and runoff, they transplanted 38,000 vines last year. Three grape varieties were selected: Chardonnay, Pinot Noir and Pinot Meunier. The abundant rain in recent months is a good thing, it promotes rooting.
“For us, it’s perfect, rejoices Gary Garnier-Guisgand, one of the partners. The land will be well filled with water and we will be able to spend the summer without fear in the event of a drought. Our priority now is for the vine to come to life. We just focus on that. If there are grapes coming out this year, we are not going to work on them. We will stay rooted so that the vine can grow.”
