Corn Cake Recipe – Panelatherapy

If there’s a thing that we like around here, it’s Bolo de Milho, a new recipe has appeared and I stop everything to try it because there are no ones who can resist this classic of Brazilian cuisine!

Inside this “Brasilzão” it ends up being a recipe that passes from generation to generation, but each family has their favorite and in each region of the country we will always find among the favorite delicacies. Its ease of making, combined with affordable ingredients makes this cake everyone’s favorite when you have a coffee at the hour.

Basic Corn Cake Recipe

Look how there is no secret, here is a basic corn cake recipe for you:

Ingredients:

  • 2 cups sweet corn (but can be canned or fresh)
  • 3 eggs
  • 1 cup of sugar
  • 1 cup of milk
  • 1/2 cup vegetable oil
  • 1 and 1/2 cups wheat flour
  • 1 tablespoon powdered yeast
  • A bit of salt

Preparation mode:

First Preheat the oven to 180°C and grease a round mold with butter and flour. Then in the blender, put the corn, eggs, sugar, milk and oil, beat until you get a homogeneous mixture.

In a bowl, sift the wheat flour and add the salt, then pour the liquid mixture from the blender over the flour and stir well until you get a uniform dough.

Lastly, add the baking powder, but be careful, stir gently until incorporated into the dough. Pour the batter into the greased and floured tin and bake for regarding 40 minutes, or until a toothpick inserted in the center of the cake comes out clean.

Remove from the oven and only following cooling unmold. Tip: If you prefer, you can add grated cheese or grated coconut to the dough to give it a special touch.
