This Coconut Rice with Almonds and Apricots is simply divine! It is very tasty and goes well with any meat, red or white.

A Simple and Sophisticated Recipe
This recipe balances sweet and savory, so be prepared for different aromas, textures and flavors than normal because the sweetness of the dried apricots contrasts with the neutrality of the almonds, the softness of one contrasts with the crunchiness of the other and, in the middle of it all , loose rice creates a unique experience. I always make it for the end of year parties, because it guarantees success!
Ingredients:
3 col. (tea) coconut oil or olive oil;
1/2 chopped onion;
10 chopped apricots;
1 cup. raw rice (tea);
1 col. turmeric (tea);
1 cabbage (chá) of salt;
100ml coconut milk;
2 cups. hot water (tea);
1/2 cup. (tea) of roasted laminated almonds;
Parsley to taste.
Way of doing itwhat:
Sauté the onion in coconut oil, then add the rice, turmeric, salt, coconut milk and water and cook until the rice is tender. Turn off the heat, place the chopped apricot on top and keep the pan covered for 15 minutes (to soften the apricot a little, so be careful not to make it too soft). When serving, mix, add the chestnuts and parsley, but only add the almonds at the end otherwise they will become mushy.
Performance: 4 servings.
Attention: When I made this recipe for the first time (it’s on Insta @eterntainment) I sautéed the apricot with the onion, but it has a better texture if done the way I taught in this post.
