Before revealing which fats to choose for cooking, our specialist gives you some rules:
Each oil has a different smoke point (ie the temperature at which it begins to smoke and become toxic). Refined oils tolerate heat better than unrefined or virgin oils. Refined oils are therefore more suitable for cooking at high temperatures, but it is important to know that these oils are no longer natural and have been modified by chemical processes using solvents.
If they are not refined, some oils are made to heat others absolutely not. Those that are not made for heating must be stored in the fridge and consumed before the expiry date.
