Chicken fajitas with bell pepper, onion and lime

Collaboration – Fajitas are a delicious Tex Mex weeknight dish and you can make them super fast. These chicken, bell pepper, onion and lime fajitas require a maximum of 30 minutes in the kitchen and they have a rich flavour. It’s my first new recipe in a new series I’ve come up with once more with Santa Maria and I’m really looking forward to making all the quick weeknight recipe inspiration! I have a lot of goodies in store for you .

You can prepare the filling of these chicken fajitas ahead of time and heat it up quickly just before eating. You serve the filling with tortillas, sour cream, grated cheese, avocado and salsa, among other things. At the table, everyone can fill their tortilla according to their own wishes and if you fold the tortilla left and right over the filling, your fajita is ready.

I’ve made these chicken fajitas several times, both with chicken breasts and chicken thighs. Both are possible, but chicken thighs are my preference. You can bake the strips nice and crispy with the fajita spice mix, but they also remain nice and tender. But the choice is ultimately yours.

All basic products for the tastiest fajita dishes can be found in the Santa Maria range. They have a fajita spice mix that consists of 100% natural ingredients and without unnecessary additives. And there is now even a fajita spice mix that has no added salt, which you can recognize by the blue band on the packaging.

Of course, Santa Maria also has tortillas in its range. For fajitas I always use the medium tortillas because they have the ideal size.

And last but not least: salsa as a topping! I love Santa Maria’s chuncky wrap salsa which comes in both mild and hot flavours. Depending on your table companions, you choose the most suitable flavour.

Ingredients

  • 400 gr chicken thighs, or chicken breast, thinly sliced
  • cooking olive oil
  • 1 pouch Santa Maria Fajita Seasoning Mix
  • 3 peppers, red, yellow and green, in thin strips
  • 3 onions, or 2 large onions, thinly sliced
  • 1 lime
  • black pepper
  • salty
  • 8 Santa Maria Medium Tortilla
  • 1 little pot Santa Maria Chunky Wrap Salsa, mild of hot
  • 125 gr sour cream
  • 1 avocado, in thin slices
  • 100 gr cheddar, grated
  • 6 twigs cilantro, leaves coarsely chopped
  • Heat a frying pan over medium heat and fry the strips of chicken thighs until golden brown and crispy in 2 tablespoons of baking olive oil with the fajita spice mix.

  • Fry the bell pepper and onion until al dente. Taste and season with lime juice, black pepper and possibly some salt.

  • Meanwhile, heat the tortillas in the microwave, pan, or oven. Then put them on the table together with the jar of salsa and cups of sour cream, avocado, cheddar and coriander. Also put a bowl with the filling on the table and garnish it with lime wedges and some coriander.

  • At the table you spread the tortilla with some sour cream and spoon a generous amount of the filling over it. Garnish with avocado, shredded cheddar, salsa and chopped cilantro, if desired. Fold your tortilla left and right over the filling and enjoy your fajita!

  • With this recipe you can make a main course for 4 people.
  • You can also replace the chicken thighs in this dish with chicken breast.
  • Preparation: 30 minutes
