Purple tres leches cake with a shot of Baileys!
Ingredients
- 6 eggs
- 1 1/2 cup sugar
- 1 cdta de vanilla
- 1 tsp purple food coloring
- 180 gr of flour without powders
- 1 jar of evaporated milk
- 1 jar of condensed milk
- 1 cup of baileys
- For the cake, beat 6 eggs at maximum speed together with 1 and a half cups of sugar, 1 teaspoon of vanilla and 1 teaspoon of purple food coloring for regarding 20 minutes. In another bowl, sift 180 grams of flour without baking powder.
- Add the flour in several batches to the eggs and stir thoroughly. Pour mixture evenly into a previously buttered round cake pan, lined with parchment paper on the bottom. Bake in a preheated oven at 180 degrees for regarding 35 minutes. Remove from oven and set aside.
- In a bowl mix 1 jar of evaporated milk, 1 jar of condensed milk and a Baileys cup.
- Pour the milk mixture over the cold cake in the mold and refrigerate. Ideally leave overnight. Unmold on a plate and finish with meringue on top.
