If the mountain does not go to Mahomet, Mahomet will go to the mountain. It remains to be seen who, Olivier Krug and Arnaud Lallement, is the mountain and who is Mahomet. The representative of the legendary champagne house of Reims and the chef of L’Assiette Champenoise, in the nearby town of Tinqueux, practice an ideal collaboration. When there is a reception at Krug, Arnaud Lallement happily sends one of his sous-chefs there and ensures that, in the prestigious premises of the cellar, the menu served barely differs from what the we’ll find it in his restaurant. Because the chef himself obviously remains in the kitchen of his own establishment, already renowned when his father was in the kitchen. When Arnaud took over the business at the end of the 1990s, we understood that he had big ambitions. And he proved it since his restaurant obtained its third Michelin star in 2014.
