Celebrating Peruvian Cebiche: From Master Cebicheros to Doble de Gareca

Nobody resists the rich cebichito. The celebration of our flagship dish, the cebiche, has as protagonists throughout Peru master cebicheros, new talents, entrepreneurs and diners eager to enjoy the best of our sea. And among them, characters who recognize the affection of Peru and that the red and white fans always keep in mind.

On National Cebiche Day, the Peruvian ‘Tigre Gareca’ (‘double of Ricardo Gareca’) was seen, who not only surprised by preparing his dish at the Victorian Cebiche Festival (which takes place in Manco Cápac square) but also invited ‘ Lapadula’ from Pucallpa to enjoy it. “My cebiche with sea bass, onion, lemon, chili pepper, coriander, sweet potato, corn, little field and the key: its touch of Gareca tiger milk. Who says I’m jobless? I am in Peru, the affection is great and here I stay, che. Think! ”, He told Trome, joking, Jaime Willis, the ‘double’ of the ‘teacher’ Ricardo Gareca.

‘Lapadula’ charapa: “I ate maiden and lizard cebiche, goodness”

And not from Italy but from Pucallpa, ‘Lapadula’ arrived. “In Peru there is affection. The Run Run of the national team (Peruvian fan) invited me. I was moved to see the ‘teacher’. He even called me, but for the pichangas, ha ha ha ”, also said Leonardo Dávila, the Pucallpino ‘Lapadula’ or ‘Lapadula charapa’, since he imitates Gianluca Lapadula.

“Back in my land we eat maiden cebiche with charapita chili pepper and alligator cebiche, great!” he stated, without failing to mention that the Gareca cebiche was also on point.

In addition, Ricardo Chumpitaz, chef at Caleta de Chumpi (El Agustino), shone by filleting a large grouper at the Victorian festival that takes place until this Friday in Plaza Manco Cápac.

They reward cebicheros in contests

Among the various contests for National Cebiche Day, the municipality of La Victoria held the ‘Best Inclusive Cebiche’ contest in the Manco Cápac square, whose winner was Martha Ecos, a recovering cancer patient. She was awarded with a cebichero module and operating license.

The juries were the maestro Javier Wong, whose sole cebiche is considered the best in the world, and also the renowned chef of ‘Mi Barrunto’, Augusto Sánchez.

In the Concha Acústica del Campo de Marte (Jesús María) the cebiche festival is also lived, and will last until July 1, led by the Association of Marine and Related Restaurateurs of Peru (Armap).

“Our ‘Cebiche Masters’ contest had more than 70 participants and first place was won by Jackeline Montalvo from La Casita del Sabor Restaurant, she received the ‘Golden Spoon’ award. Second place was obtained by Zenaida García from Toque Mágico Restaurant”, stated Javier Vargas, president of Armap, an organization that also promotes our flagship dish.

Peru has approximately 38,000 cebicherías. INEI reported that, in Peru, cebiche is the second most consumed dish outside the home, according to the results of the National Household Survey (ENAHO). There are new items of marine enterprises such as ‘Lechería Los Mellizos’ (sale of tiger’s milk) by the entrepreneurs Luis and Nicol Sánchez Vega.
