Cauliflower curry with basmati rice

Ingredients:

– 1 tbsp. yellow curry paste (or another color if you prefer more spicy)

– 1 medium onion

– 3 cups of cauliflower

– ½ cup of coconut cream or heavy cream

– Sal

– Pepper

– Cilantro

– 1 cup of basmati rice

– Cashew nuts to taste

– Oil.

preparation:

1. For the rice, it will first be washed well until the water comes out transparent. Then bring to low heat with a little oil and add 2 cups of boiling water. Cook 20 minutes at low temperature.

2. Cut the onion into brunoise and fry. Add cauliflower and continue to sauté. Then add the curry paste and a splash of water to dissolve. Add the cream and integrate. Serve with rice, a little chopped coriander and split cashews.
