Caramel truffles to sweeten the day

Ingredients
– 250 ml of milk cream
– 110 g of sugar
– 60 ml of water
– 50 g butter, soft
– 250 g of milk chocolate

For the bathroom:
– 200 g of milk or white chocolate coating

Procedure

Place the cream in a small saucepan over medium heat and bring to a boil. Withdraw and reserve.

Place the sugar and water in a medium saucepan over low heat and stir until the sugar dissolves. Increase the heat to medium and bring to a boil. Cook for 6 to 6 ½ minutes or until golden. Remove from heat and working quickly, add cream and shortening. Return the saucepan to the heat and mix.

Place the chocolate in a bowl, pour over the caramel mixture, and stir gently until the chocolate is melted and the mixture is smooth. Place in a 20 cm square mold lightly greased and lined with parchment paper and refrigerate for 2 or 3 hours.

Roll tablespoons of the mixture into balls and place on a parchment-lined baking sheet. Freeze for 1 hour or until firm. To bathe them, dip the truffles in the melted chocolate and place them on a tray lined with parchment paper. Reserve in the fridge for 1 hour.

It is important that the caramel is a deep golden color, as adding the cream and butter will stop the cooking process. If the caramel is too pale, it will have a weak flavor. And if it’s too dark, it will taste bitter.
