Rémi started as an amateur brewer in his free time, with friends, “Just for fun“. Very quickly the question arose of finding a place to brew their recipes on a larger scale: “Before, we went to see a professional outside of Brussels who had his own facilities and who brewed our beers for us”, explains Rémi.
But one day, Thomas, the founder of the brewery “Chicory“, contacted them: he has just launched a call for candidates to create a brewing cooperative in Brussels. “Thomas’ idea was to come together between microbreweries to be able to invest in production equipment, pool equipment, and above all, relocate production to Brussels. Rémi and his acolytes are ready. They will then be joined by the brasserie-bakery “Janine“and by”One Beer Two Toasts” (1B2T).
At the beginning of 2020, the “CoHop” project was born and it has a triple objective: produce quality craft beers while having a positive impact, all in an open environment and friendly in the heart of the capital.
And from the start, eco-responsibility is engraved in the DNA of “CoHop”: “These are values that we share between the different breweries. For us it is very important. Everyone knows a little regarding the general context of our planet, so I think it’s just obvious to pay attention and take that into account at the very start of the project, to try to do that as best as possible.” explains Rémi.
