Ingredients

  • 600 g of Italian tomato;

  • 4 cloves of garlic;

  • 2 tablespoons olive oil;

  • 1 medium carrot;

  • 1 teaspoon of salt;

  • 1/2 cup of fresh basil.

Instructions

  1. Start by cutting the tomatoes and carrots into cubes. Then she distributes them on a greased board with a little olive oil, trying to leave one side of the other;
  2. Finish mixing the rest of the olive oil, garlic cloves and salt;
  3. Take it to the oven at medium temperature, approximately 200º for 40 min or until your tomatoes are withered and the carrots soft;
  4. If you prefer, cover your shape with aluminum paper;
  5. After that time, take your roasted tomatoes to the processor or blender and beat until you form a sauce. Finish by adding the basil and beat just enough for it to spread throughout the sauce;
  6. Store in airtight containers.

Notes

  • I prefer to roast my tomatoes without the paper, as I like the flavor better. By covering it, you will have tomatoes and carrots that are less browned, softer and possibly need less oven time;
  • Be very careful when processing your hot tomatoes.
