Authentic Neapolitan pizza in Quebec

Pizza maker Steve Speciale, who owns the Pizza Verace restaurant in Quebec City, offers authentic Neapolitan pizza in his establishment.

This culinary practice is such an institution that it has been inscribed since December 7, 2017 on the Representative List of the Intangible Cultural Heritage of Humanity produced by UNESCO.

The techniques for cooking this type of pizza are taught in schools in Naples, Italy, but some apprentices can also learn this art in Neapolitan families.

“It’s a know-how that we want to protect and that we want to offer people through what we do,” explained the pizza maker.

Steve Speciale and his crew are among the few in Canada to be recognized by the Associazione Verace Pizza Napoletana. He received his training in Italy.

Besides, all the ingredients in his restaurant, apart from the mushrooms, come from Italy.

His team consists of Luiggi Coronella, Pietro Davino, Riccardo Cassella and Giovanni Campisi. Together, they have more than 60 years of experience preparing pizzas in the city of Naples.
