Ingredients:
– 250 gr of almond flour
– 100 gr of butter
– 70 grams of cornstarch
– 100 gr of powdered or common sugar
– 1 egg
– orange zest (a little, it looks great)
– 2 teaspoons of baking powder
– 25 gr of bitter cocoa
Preparation
They make a cream with soft butter, sugar and zest. Add the egg and continue beating. We add all the dry ones previously mixed. We integrate everything forming the dough (if they see that it is still very soft or wet, they add a little more cornstarch). They take the dough 1 hour to the fridge or half to the freezer.
After that time they stretch the dough (between film, it is easier), if it softens they return to the cold. Cut the caps and cook them in a preheated oven, 180°C for 8/10 minutes, depending on the oven. Keep in mind that if you overcook, they will look like cookies (delicious), but for the alfajor they have to be a little less crunchy. If you have doubts, try a couple first and that way you see the exact time.
They are filled with pastry dulce de leche, I made them a semi-sweet chocolate bath with couverture. Let dry and enjoy!!
