According to Gault-Millau, these are the best Frankfurt sausages in Austria – Food & Drink

Frankfurters are not only a super classic snack in this country, even if outside of Austria they are more likely to end up on the plate under the name “Viennese sausages”. Anyway, a jury of experts from Gourmetverlag Gault Millau took a closer look at the matter and bit hard. Sausages with a meat content of between 67 and 84 percent were tested. When it comes to the sausage, water, starch and spices also have to be taken into account. The jury would also have been interested in whether the frankfurter comes in natural casing or artificial casing. The art of producing Frankfurters, argues Gault-Millau, lies in ensuring that the meat is firm but not rubbery and that the taste is balanced.
