A recipe for sweet acacia flower fritters

First get the flowers in a park, away from polluted areas! Be careful when picking, because the ugly needles on the branches can hurt you. And also, during the preparation, take care of the cleanliness so as not to scatter seeds everywhere!
- 200g flour and baking powder
- 1 glass of cold beer (200 ml)
- 1 egg and 200ml very cold sparkling water or orange blossom water
- peanut oil
- sugar or honey
Mix the flour with the baking powder. Gradually add the beer (you can replace the beer with milk). Add the egg and the orange blossom water to obtain a relatively liquid paste. It must also be very cold to achieve the thermal shock when you dip the flowers in hot oil to brown them. Place the acacia flower fritters on a paper towel to absorb the excess oil. They should become crispy and dry. Sprinkle with icing sugar and serve warm!
The ingredients you need are: 20 bunches of acacia flowers, 1 cup (150g) all purpose flour, 1½ cups ice cold sparkling water as needed, a pinch of salt, peanut oil for frying, sea salt for sprinkling.
Make sure the flowers are free of insects. Mix flour and salt in a bowl. Slowly add sparkling water, stirring with a whisk until most of the lumps are gone. Pour just over an inch of peanut oil into a large saucepan and heat to 175°C. Hold the flowers by the stems while dipping them in the paste. Carefully drain off any excess batter before frying. In order not to overload the pan, lay the flowers in batches. Once cooked on one side, flip them over with a slotted spoon, until lightly browned.
Remove the donuts from the oil and place them on a dish lined with paper towel. Sprinkle with salt for a tasty and crispy appetizer.

The ingredients for regarding 20 donuts are: 2 eggs, 200 g flour 00, 100 ml sparkling water, 200 ml whole milk, 130 g fresh acacia flowers, 80 g caster sugar, 1/2 sachet of yeast, 1 pinch of salt, the zest of a lemon, frying oil.
Prepare a paste by mixing the eggs with the sugar, without beating them. Add salt, lemon zest and flour. Mix well and start incorporating the liquid ingredients little by little. Leave the resulting paste to rest for 10 minutes.
In a skillet with high sides, put enough oil for frying and heat. Dip the acacia bunches one by one and drain before putting in the pan. Fry on both sides and place on a plate lined with paper towel. Donuts are also excellent served hot or cold. You can sprinkle them with powdered sugar or honey if you prefer.
