Rasmus Espersen, a team from Aarhus University in Denmark, conducted a randomized trial of 30 postmenopausal women aged 60 to 80 with vitamin D deficiency to find ways to help absorb vitamin D.

To measure the immediate changes in blood concentrations with vitamin D and various food intakes, the researchers took 500 ml each of water containing 200 g of vitamin D3, milk, juice, and juice containing vitamin D combined with whey protein isolate. prepared Participants were then given 500 ml of vitamin D-free water as a control placebo in random order. A total of 8 blood samples were collected on each test day (at intervals of 0 hours, 2 hours, 4 hours, 6 hours, 8 hours, 10 hours, 12 hours, and 24 hours).

As a result of measuring the maximum concentration over time, it was found that the bioavailability of vitamin D was highest in milk and water. “This is unexpected, given that milk contains more fat than water,” Espersen said.

Juices containing whey protein isolate did not increase the maximum concentration of vitamin D3. However, compared to juice, vitamin D3 concentrations were significantly higher in response to milk and water intake, and there were no differences between milk and water. Therefore, the study concluded that vitamin D fortification was better in milk or water than in juice.

The results of this study were recently presented at the 24th European Congress of Endocrinology, held in Milan, Italy.
