At Restaurant Vermeer you will experience a tasteful adventure! The delicious dishes and wines, a great atmosphere and friendly staff make this restaurant a must-visit in the center of Amsterdam.
A warm welcome
At Restaurant Vermeer we were warmly welcomed by Maître Bjorn van Aalst. After his introduction regarding Vermeer and the menu, we opted for the five-course menu. The menus at Vermeer are created by Chef Chris Naylor and can also be served as a vegetarian option.
In addition to the five courses, we were surprised with a number of extras. One of these dishes was the tartelette filled with pumpkin, walnut and juniper berry. A perfect start to the evening that was well received.
A diversity of dishes
Then Chef Chris Naylor came by with a tasty lettuce taco with jalapeño ice cream. Then the starter offered a choice between beetroot with roast watermelon or beetroot with an Irish oyster. Both options were delicious and beautifully presented. We enjoyed this with a chilled red Foradori Lezèr wine.
Local ingredients
Vermeer works together with local greengrocers such as Wim Bijma and Janneke Klootwijk, which was clearly noticeable in the autumn vegetable dish. Carrot, parsnip, black radish, rose hips, bimi and various types of cabbage were combined with vadouvan (a fermented curry). The dish tasted perfect with a glass of Gilvesy St. George Cuvee from Hungary.
Witlof with love
Chicory with celeriac or monkfish was the next dish. The roast chicory was served with radish and parsley. Both dishes were supplemented with borlotti beans from Italy and lovingly white chicory, presented by Bjorn.
Adventurous taste experience
In between we enjoyed a ‘little snack’: ravioli filled with chicken liver or kimchi, served in an onion broth. Then we tasted dishes with caramelized Brussels sprouts. The vegetarian option was a carrot ‘risotto’. The other variant was served with pheasant, farmed pear and pepper sauce. Both delicious!
Sweet ending
The evening ended with surprising and tempting desserts. A pumpkin crème brûlée with lime and Timut pepper sorbet ice cream. This dessert was followed by a passion fruit semifreddo with pear and a hint of ginger with Thai curry ice cream and cream cheese and coffee. A unique taste experience!
Final indulgence
To end the evening we were spoiled with delicious sweets: oliebollen, macarons, gingerbread and sugar lollipops. These little surprises were a perfect end to an unforgettable evening at Restaurant Vermeer. And don’t worry if you can’t eat it all, Vermeer will happily pack the food for you, so you can enjoy it at home.
